Notes

The seaweed thins are optional, but they’re so good and low calorie too — I get the its ones from Tesco and they’re 24 cals a pack! When I eat it I add a bit of the rice mix in the middle then wrap it up so it’s like a proper sushi roll!

Tip: if you're meal prepping, mash the salmon into the rice with the sriracha mayo and store in the fridge for up to 2 days. Add the avocado and cucumber fresh on the day so nothing goes brown/soggy! Reheat the salmon rice in the microwave for 1-2 minutes then add the cold toppings when you're ready to eat.
